United Daughters of the Confederacy, Jefferson Davis Chapter 900 has published a historical reprint of their Chapter’s 1908 Cookbook.
President Marilyn Kinne explained after discovering the existence of the cookbook, how the project came about. After extensive research, the original book was found in the rare book section of the History Branch of the Cleveland Public Library. President Kinne and Anita Green helped complete the project.
The original 1908 Cookbook, Echoes From the Kitchen was compiled by Mrs. J. H. Hardwick. Members of the local chapter and UDC members from other chapters around the country contributed recipes to the cookbook. Many well-known family names in the Cleveland area such as Hardwick, Lea, Stewart, Shugart, Knox, Mea, Taylor, Cooksey, and Rymer, included recipes. Famous women such as Mrs. Margaret Jefferson Davis Hays, Mrs. Theodore Roosevelt, Mrs. William Jennings Bryan, and Mrs. Benjamin Harrison have recipes also.
The UDC Chapter chose to reprint the cookbook exactly as the 1908 edition. The book features the local language and descriptions, as well as all the original advertisements. The most unique feature is the methods they used to measure their ingredients and the ways they controlled their temperatures.
Sections included in the cookbook are Breads, Cakes, Cookies, Cheese Dishes, Croquettes and Pates, Chafing Dish, Candy, Desserts and Ices, Drinks, Eggs, Fish, Meats, Puddings, Pastry, Preserves, Poultry, Pickles, Sandwiches, Soups, and Vegetables. A section on miscellaneous household hints is included, also cures for many ailments.
All proceeds from the sale of the cookbook will be used for the UDC objectives, which include benevolent, educational, historical, memorial, and patriotic projects. Recent projects completed by the UDC include cleaning of the Confederate monument in Cleveland. A monument was placed in the Confederate section at Fort Hill Cemetery. Markers placed on soldiers' graves and many more projects are being planned.
President Kinne presented Treasure Swanson, Librarian at the History Branch of the Cleveland Public Library a copy of the recently published Cookbook.
