Mario Tax and his wife, Hannia, were living in Raleigh, NC when they made the decision to open a new restaurant, but were unsure about the location. They decided to check out places in Tennessee, as they had a good friend living there. After some searching, they realized that they had fallen in love with Red Bank and chose that city as the place to open their new restaurant, Sabor, on 1800 Dayton Blvd.
Earlier this week Mr. Tax, along with his wife and his brother, Joel Tax, opened the doors to Sabor, serving modern Latino food & sushi.
The inspiration to feature Latin food comes from Tax’s background from growing up in Guatemala and his wife in Costa Rica. Mr. Tax added that he also had 12 years’ restaurant experience in sushi cuisine, and because of his love for the delicacy, he wanted to include sushi on their menu.
Officials said, "Sabor is a Spanish word that means flavor, taste or tang. It can refer to the quality produced by the sensation of taste, or to an enjoyable and distinctive quality of something. Patrons will quickly discover that the Sabor Restaurant delivers on its name when dining on one of the restaurant’s Costa Rica style menu selections. Enyucado, for example, is cassava - Costa Rican croquettes - filled with flavorful ground beef. Their tacos are corn tortillas filled with brisket or chicken topped with cabbage and sauce. One rather unique breakfast item Sabor features is gallo pinto (rice and beans), a well-known breakfast item in Costa Rica and other Latin American countries."
The Tax family realizes that their restaurant offers a unique selection of foods that most people may have not tried before, but they are passionate about the quality of their food and would love to see people open to trying more modern dishes inspired by Costa Rica and other Latin American countries.
