Jason from Knoxville emailed me with a question about leftovers. “I smoked way to much chicken for a cookout that was rained out. Any suggestions for about 15 pounds of smoked chicken?” Well, the freezer in the garage comes to mind. But, if you are looking for some simple recipes that can knock out some left overs here are a few suggestions. But don’t look past the freezer, that is still a good idea.
Try pulling the chicken if it has not yet been pulled. Chop it and mix with some black beans, corn and some shredded cheese or cream cheese. Mix together with some salsa and wrap a spoon full up in an egg roll wrap. Bake in an oven with a slight egg wash for about 20 minutes at 350 degrees until golden brown. Don’t roll the egg rolls to tight. As they cook the insides will expand and the shell will break open.
How about a Smoked Chicken omlette? Just sub out the ham or bacon with your chicken. Heck, why make a change. Just toss the chicken in with your other favorite ingredients. Something I have been working on is a Smoked Chicken quiche. Have not nailed down the exact ingredients I want to use but so far every attempt has been very tasty.
Here is a quick dish you can make. Cube some baking potatoes. Place them in a bowl and toss with some olive oil, Cajun seasoning and Italian seasoning. In a baking dish cook the potatoes covered in a 350 degree oven for about 30 minutes. Remove from oven, stir in I cup of your favorite cheese and as much of your left over chicken that you desire. I have also seen versions of this recipe using cream of mushroom or chicken soup. Cook an additional 10 minutes or so to melt the cheese and serve hot.
Just For Becky – Becky is an 8 year old young lady who emailed me with a great idea for kids. Next time you want a fun kids meal make a peanut butter and Jelly sandwich. Dice into quarters and place on kabob skewers. Between each piece of sandwich toss in a slice of apple. Now Becky’s mom added that she cuts the sharp ends off the sticks.
