Cambridge Square Welcomes Acme Fusion Café To Restaurant Offering In Ooltewah

Cambridge Square has announced its latest dining concept, Acme Fusion Café (Acme), a quick-serve, eclectic eatery that focusses on combining various cooking techniques, spices and flavors, and locally sourced, fresh ingredients.

The restaurant will be located in the development’s public square, with both indoor and outdoor seating. Acme will be the second concept that owner/operator Evan Chen brings to Cambridge, his first being Fulin’s Asian Cuisine which he opened in 2019, introducing his special and extensive brand of Asian fare to the greater Ooltewah market. Acme is scheduled to open in late summer 2023.

Cambridge Square is a commercial and residential community in Ooltewah, just east of I-75 North. It is home to more than 40 local restaurants, retailers, health and fitness businesses, health care and professional service office tenants.

“Evan has played a significant part in Cambridge Square’s restaurant success,” said Jim Cheney, who oversees marketing and leasing for the development. “He’s a top-tier operator who brings a level of creativity and sophistication to his menus, while also understanding and catering to the tastes and expectations of his customers. We’re thrilled he has decided to bring a new concept online and we’re confident that our patrons will feel the same.”

Mr. Chen has tapped chef Chenhui Lee to oversee the daily operations at Acme with the direction of building a dining experience that is fast, fresh, and delicious. Chef Lee grew-up in Las Vegas, Nevada and Orange Beach, Al., where he discovered an appetite and curiosity for unique culinary environments, and international food.

The Acme menu will feature a diverse range of ethnic dishes, offering new approaches for both traditional and non-traditional recipes. Specific items will include fried and grilled seafood, Fusion tacos, fish and chips, Tuna Salmon Poke, chicken cutlet bowls, Ceviche, and Salmon red curry with coconut rice.
