Sister Restaurant, Little Coyote Adds To The Niel Team's Culinary Scene

Chef Erik Niel and wife Amanda, owners of the eateries Easy Bistro & Bar and Main Street Meats, are proud to bring a new concept, Little Coyote to Chattanooga late 2022. The Niel’s main goal has always been for patrons to feel appreciated and supported and they will continue to live out that same mission. Working hand in hand with their staff each step of the way, this opportunity to grow feels so special to each individual who has played a part in this story, said officials. 

Located in the heart of St. Elmo, the Niels are excited to keep expanding their hospitality, with the help of their team members, to the area that they call home. Little Coyote will feature smoked meats and fresh tortillas, leaving guests with a full belly and happy heart, said officials. Using the same ideals and fundamentals as Easy Bistro & Bar and Main Street Meats, the Niels aim to bring their style of spirits and cocktails to St. Elmo as well as create shareable plates for the main course that can be spread across the table. “You always have a seat at our table,” says Chef Erik Niel.

The creative concepts in Little Coyote derive from woven tapestries and plants as the colors used will be earthy tones such as emerald green, terracotta and cream while having a modern feel for guests. Incorporating a play on the outdoors with their patio that will be ready for all four seasons featuring a bar for visitors to feel at home.
