McLemore Resort To Celebrate 1 Year Of Auld Alliance With JUSTIN Wines

  • Monday, April 14, 2025
McLemore Resort is celebrating the inaugural year of Auld Alliance with a special dining experience featuring JUSTIN Wines. On Tuesday, May 13, guests will enjoy a multi-course journey from Lookout Mountain to the vineyards of California, guided by Justin Baldwin, founder of JUSTIN Wines, and Chef Christopher Cofino, Chef de Cuisine at Auld Alliance.

Officials said, "Auld Alliance celebrates the harmonious fusion of cherished Scottish classics and French elegance, all against the backdrop of rugged beauty and timeless charm."

Georgia Trend stated, "The culinary preparations using the best quality locally farmed and foraged produce rival those found at many Michelin-rated fine dining establishments around the world.”

The restaurant was recently honored by Golf Inc.’s Golden Fork Awards earning second place under the category “New F&B Facility: Public/Resort.”

Mike Burton, managing director of McLemore Resort, said, “Partnering with JUSTIN Wines for our one-year celebration of Auld Alliance enhances our commitment to providing guests with exceptional culinary experiences.
From the extraordinary wines of JUSTIN to our exquisite, locally sourced dishes, this event will be a journey of flavors that guests won’t soon forget. It’s an honor to bring the world-class legacy of JUSTIN Wines to Lookout Mountain for this special occasion.”

Officials said, "As the Pioneer of Paso, JUSTIN wines put Paso Robles on the winemaking map. Behind the label, their winemaking approach uses techniques that are usually reserved for more boutique wines, including hand-harvesting and hand-sorting.

"In 1981, inspired by Bordeaux's First Growth wines, Justin Baldwin began his journey in winemaking. After finding a perfect 160-acre parcel in the Santa Lucia Mountains, he planted Cabernet Sauvignon, Cabernet Franc, and Merlot, creating his flagship wine, ISOSCELES, in 1987.

"Today, over 25 years later, ISOSCELES remains a cornerstone of JUSTIN Vineyards & Winery. As Paso Robles has evolved into a top wine region, JUSTIN is recognized as a pioneer of award-winning Bordeaux-style wines on California’s Central Coast."

Guests of the dining experience will enjoy the following menu:
